If your company uses a standard font, or you simply dislike the default, changing it by hand in every email wastes time and is easy to forget. Outlook lets you set it once, with separate settings for new messages and for replies and forwards in the classic app.
Classic Outlook keeps the setting under Stationery and Fonts, with one font for new messages and another for replies and forwards. New Outlook and Outlook on the web share the same Compose and reply setting.
